My boys are crazy about anything chocolatey and cakey and sometimes we we try one of those ready made cake mixes. Since moving to Valencia, I’ve never really found any that the boys are fond with, if I do have to make something out of the box, I prefer to use the Betty Crocker Cake Mixes which you can usually get from British supermarkets or the specialty aisles in Carrefour. They’re pretty convenient, easy and fair enough tasty, but nothing compares to real home made cakes.
Bearing in mind chocolatey and cakey, I decided to surprise them this weekend by making a really simple homemade brownie. I never usually tell them that I’m making something because once they know they never stop nagging, anyway, surprises are better, once they smell baking chocolate coming from the kitchen at that moment I’m probably the bestest mom in the world.
The ingredients are pretty easy to get hold of here. I usually go to my local Lidl or Consum, I find that they stock a lot of the things I need for cake making also at a very reasonable price compared if you was to go to a larger supermarket such as Carrefour.
So here it is my simple brownie recipe, a weekend treat that goes down very well in my household. Very easy to make and great served with thick cream/nata or a dollop of vanilla ice cream.
- 300g Unsalted butter
- 250g Dark chocolate 70% + Cocoa solids
- 125g Cherries
- 130g Cocoa Powder 100% Cocoa Powder
- 115g Plain flour
- 2 tsp Baking powder
- 410g Caster sugar
- 6 Large eggs
Preheat your oven to 160°C. Line a 30cm x 23cm square baking tin with greaseproof paper. In a large bowl over some simmering water, melt the unsalted butter and snap the dark chocolate in to little pieces and mix over the bain marie until smooth. Add the cherries and stir together.
In a separate bowl, mix together the flour, cocoa powder, baking powder and caster sugar, add this to the melted chocolate,cherry and butter mixture. Beat the eggs and mix in until you have a silky consistency. Stir well.
Pour the brownie mix into the baking tray, and place in the oven for around 40 minutes. The brownies should be slightly springy on the outside but sticky and gooey in the middle.
Allow to cool in the tray, then transfer to a large chopping board and cut into 10cm squares. Serve with cream or a dollop of vanilla ice cream :). That’s it!
